- Size Matters: the top (darkest) is med sized; the egg with the lightest colored shell is lg; the other egg is … well … huge.
Chickens have seasonal affective disorder. OK, not really, but sunlight does influence them to lay more eggs. And a hen loves to lay eggs. I don’t know that the hen that laid this gargantuan thing was happy about it, though there were no demands for hazard pay, and believe me, to make certain, I listened at the hen house door a long time after gathering this super-sized egg. Happy little cluckers, all.

- Unsurprisingly, the extra large egg contained two yolks and was the equivalent of two large eggs.

- I used these 3 eggs in a recipe calling for 4 eggs. Rule of thumb: an egg adds 1/4 cup volume to a recipe. (So if you are using applesauce instead, use 1/4 cup per egg.)
